This weekend, I went to the Apple Festival at Peddler’s Village in New Hope, PA, and was lucky enough to stop by The Aetna Healthy Food Fight Philly Cook-Off event. I met one of the finalists, Coleen McCrea Katz from Crafty and Cooking Momma, who was gracious enough to share with me about her experience.
Meet Coleen McCrea Katz, that’s Coleen with ONE “l’!
“My recipe is Glorious Grilled Chicken Bundles,” Coleen told me, genuinely thrilled, “and it’s my first cook off!” Recipes for this event were given points based on nutritional value.
Glorious Grilled Chicken Bundles
“They picked the top 48 from Philly area through online voting,” Coleen told me. Voting was by visitors to “The Aetna Healthy Food Fight” website. “The contest was a lot of fun! People were asking me about my recipe as I was cooking. I wish I could have handed out copies of it to the people who were asking about it.”
Coleen described her delicious-looking Glorious Grilled Chicken Bundles to as “chicken stuffed with vegetables. I used Philadelphia Cream Cheese, dill and fresh parsley to balance out the dill.” Tomatoes and asparagus help are wrapped in thinly pounded chicken breast and then brushed with olive oil and dusted with cracked pepper.
I asked Coleen about the background of her recipe. “It’s important to me to limit fat and salt because the last two generations of the women in my family have died of heart disease. My mother was only 63 when she died very suddenly. I have a brand new grandson and I would like to be around for many years to come with him! My nephew is also a Type 1 diabetic. So nutrition is really something I take to heart.
“We love to grill around here in the summer when it gets to be sweltering, but who needs all of that salt, fat and calories from bottled sauces? So I came up with this alternative that is loaded with flavor and nutrition!”
