I’m happy to report that we stuck to our goal last week – yay! We only ate out on Saturday, except for a quick breakfast on Tuesday. I’ve started eating Ezekiel English muffins with Earth’s Balance soy-free natural spread for breakfast, and as of today, will remove milk from my coffee, which means the only milk I will have will be what’s in already baked foods.
This is a peek at some of the meals we cooked and ate last week:
- Roasted seasoned chicken with rice
- Steak with salad and spaghetti squash with natural spread
- Roasted pork loin with potatoes and salad
- Mexican pizza (see Friday’s recipe)
- Breakfast for dinner (pastured scrambled eggs)
- Cheat night was Applegate Farms hot dogs
I feel good. I also know that’s a lot of meat, but I’m OK with Paleo eating! I make my portions small, and am good with the kids eating more as they are always hungry.
I’m cooking with all organic and grass fed meats too. Here are some Pennsylvania farms that are great:
- Hidden Spring Farm
- Wild Fox Farms
- Wegman’s Organic works with local farms
Yes, it costs more but I know the foods are safe from salmonella, antibiotics and other junk – worth it, if you have growing kids!
This week, the kids are home so I have one goal: incorporate exercise. I need to look up workouts for my arms– I have a gorgeous dress for my niece’s wedding on 9/15, if only for my arms, it’ll look perfect! I need to research back workouts and start doing crunches again.
Finally, I’ve applied for another fitness opp, I’ll let you know how that goes. I’m e proud of us, and it’ll be great if we can incorporate family walks into the program too while the weather is nice.
