What’s in My VitaClay: Chicken Cacciatore

Welcome to my new recipe series, “What’s in my VitaClay.” Before we get started, you might want to know *what* a VitaClay is. It is a company that creates a line of slow and rice cookers which simmer your food in a ceramic container ensuring you a toxin-free meal. Other slow cookers can leach toxic chemicals into your food. While the VitaClay is a bit pricy (you won’t find any “$10” deals on it like my last slow cooker), it is one of the very few clean options. I own an 8 Cup VitaClay Rice and Slow Cooker and let me tell you, it was worth EVERY PENNY.

The slow cooker comes with a mini cookbook, which was the inspiration for this recipe. As usual, I did not have the exact ingredients and I had to lower the onion content (hubby is not a big fan) but it came out amazing!

Vitaclay Chicken Cacciatore Slow Cooker Recipe

INGREDIENTS

  • 1lb. organic chicken breasts, cut up
  • 1 28oz. can organic fire roasted diced tomatoes
  • 1/4 cup onion (any will do, all I had was red onion and it worked)
  • 1/4 cup red wine (I recommend dry, but mine was only semi-dry)
  • 3 cloves of garlic
  • I cup sliced white mushrooms
  • 1/8 cup chicken broth

Put all ingredients in your crock pot. If you have a VitaClay, select “Stew” and cook for 2 hours. Serve over gluten free spaghetti.

What I Use:
All organic ingredients, including Wegman’s chicken and the rest from my farmer’s market or health food store.

    Chicken Cacciatore makes me think of my grandmother because that was her all-time favorite famous dish. She’d love this!

      Yea, me too! It’s so easy. I’m hoping this spotlight thing will help. Have to experiment cooking GF pasta in it too!
