I know I don’t OFTEN do recipes, but I had to share with you this recipe for Red Curry Chicken that is easy, dairy-free, gluten-free and all around clean. My husband is a big fan of red curry with coconut milk and while I’m not, if I make it at home, it’s healthier and I can balance the ingredients to get it just right. AND it’s super easy. Without further ado, here is my recipe:
Red Curry Chicken
1lb. organic chicken breasts, cut up into strips or cubes
1 tbl. oil (I recommend coconut oil)
1 tbl. red curry paste
1/3 cup Silk Coconutmilk
1 head organic broccoli, chopped into bite-sized pieces
1 glove fresh garlic
Water if necessary
Rice, prepare as per directions
Heat the oil in your pan over a medium flame. Cut the chicken into strips and add to your oil. Add the curry and Coconutmilk. Stir very well, until the curry paste and the Coconutmilk make a sauce (I find a large fork works best). Add garlic clove and broccoli, then simmer until your chicken is cooked, about 45 minutes, depending on how large you’ve cut your chicken. Keep an eye on it, adding water if the sauce gets too think, about 1/4 cup at a time. Serve over rice.

- Thai Kitchen Red Curry paste: Not organic or Non-GMO, but it is has a clean ingredient list with no additives or weird chemicals.
- Lundberg Jasmine rice: Lundberg has been shown to have the lowest levels of arsenice and the Jasmine rice is delicious!
- And finally, cook it all in a well-seasoned cast iron pan – Lodge is very good, as long as you season it yourself. (They use GMO soybean oil to seasons their pans.)
