Orange Cranberry Almond Cookies

Ah cookies. I LOVE cookies, but my kids and my husband love them EVEN MORE. It is ABSOLUTELY a necessity to have cookies at Christmas. I am, though, very tired of the simple-but-boring gluten-free chocolate chip cookie

Recently I was inspired by my local cupcake provider to redefine the “usual” cookie – and I came out with a hit! Without further ado, I present my very own Orange Cranberry Almond Cookie recipe.*

Organic Orange Cranberry Almond Cookies

Makes about 5 dozen.

  • 2.5 cups of gluten free flour. (I recommend all purpose, non-GMO or organic flour that is NOT only garbanzo bean)
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup grass-fed butter (or organic butter substitute)
  • 1/2 cup + 3 tbsp organic sugar
  • 3/4 cup organic light brown sugar or organic coconut palm sugar
  • 1/2 tsp organic vanilla extract
  • 1/2 tsp organic orange extract
  • 1 tsp organic almond flavor or extract
    (I recommend using alcohol-free extracts)
  • 2 large eggs
  • 1/2 cup organic dried cranberries
  • 1/2 cup organic almond slivers (optional)

Preheat oven to 375 and line your cookie sheet with untreated parchment paper. Whisk the flour, baking soda and salt in a bowl and set aside. In your mixer, beat butter, both sugars and the 3 extracts on medium until they are creamy. Add one egg at a time, mixing until well blended. Once done, slowly add in the flour while beating. Next, mix in the dried cranberries and almonds, using a large wooden spoon. Drop a teaspoon shaped size onto the parchment. Bake for 9-12 minutes, until golden brown.

    Gina, these cookies look amazing! I have a new found love of cranberries. I can’t get enough. These cookies are going to be perfect! With a little one allergic to almonds, I wonder if there is a substitue or maybe just leave out the extract? Thoughts on that?
