Grilled Beet Salad for Dinner!
Yesterday, we needed to replenish eggs and manage to squeak out the time to stop by our local Mennonite farm store, Echo Hill. They has a table full of fresh, homegrown, chemical-free produce outside and I snagged a box of beets – a true bargain at $2.50!
Now, I grew up eating beets – the canned kind that mom would dish out with vinegar and onions, but I’ve only recently started buying some of the more “exotic” produce mom used to cook. I cooked them the first time this Easter for our church Seder, although out here near Pennsylvania Dutchie land, beets are not in the least unusual.
What I never knew as a kid was how healthy beets are for you! From nutrients and fiber, to lowering blood pressure, these gem colored beauties are rich in health benefits. Check out “Benefits of Beets” by Dr. Mercola. So how to grill them up? EASY as pie…
How to Grill Beets
It was so simple. I cut off the ends of the beats and then peeled them and sliced them in half length-wise.
Next, I brushed them with extra virgin olive oil and sprinkled some sea salt on them.
After Chris quick-grilled some chicken cutlets, the grill was pretty hot so I laid the beets on top. We did one side for about 10 minutes, but the fire died down. He put them off to the side and when it got hot again, flipped them to do the other side for another 10 minutes. (Actually it was a bit longer, I think they should have been off sooner.)
I took them off and took a bite – yum! They had a lovely smokey flavor that really went well with chipotle, so I seasoned them with that. Next time, I’ll put that on before I grill them.
After that, it was easy peasy to make a salad with red leaf & spinach spring mix, red onions, balsamic and EVOO. Perfect accompaniment to a grilled dish.

I never cook beets right but your method looks great!

I’ve boiled them – which takes FOREVER – and baked them in a recipe with potato and onions. Outside of this, they can be challenging, which was why I loved this recipe.

These are so pretty! However beets…beets are my #2 most dreaded food (after oysters) lol! BUT they are my moms favorite food (right after oysters…Weird, huh?) I will totally grill these up for her this summer and I know she will love them! Thanks for thinking about beets “for” me!
