Cooking Up “Vegan Ice Cream” with My Kid

What’s more fun than making fresh ice cream with your child? Absolutely nothing!

I recently got a copy of “Vegan Ice Cream” by Jeff Rogers for review, so I decided to do something fun on these long summer days with Amelia and whip some up.girl making ice cream

The recipe called for organic raw cashews.
Pricey, but I got a decent price at Echo Hill. So so delicious!girl making ice cream

Maple syrup is required too. Amelia just loved sticking the ingredients in.ice cream blending

Yes, my Blendtec Total Blender can make ice cream, but I wanted to try out my KitchenAid Ice Cream Maker Attachment!

One mistake I did was buying sweetened cocoa to add – it came out super sweet!
Next time I know better. I just blended, rather than use the “ice cream” button.ice cream blendingI FINALLY got to try my ice cream maker. I had no idea how this would work!
Needless to say, I made it too soft 🙂

 The hardest part was telling Amelia it had to be put BACK in the freezer for a while before she could it. It was too sweet for me, but the girls loved.

As far as the book, I love it! So many recipes – from basic chocolate (I had to start easy) to Jalapeno Heaven and Coconut Macaroon. The book reviews the basics you need to know, including sweeteners, nut milks, extracts – everything to make proper and healthy vegan ice cream. It contains recipes for 80 ice creams and a few sauces as well.

The only downside is the ingredients are expensive. That said, you are in control of the taste, flavor, texture, ingredients – I had no idea it was so awesome to make ice cream! The book is really easy to follow – just a few items and steps – and even my mistake didn’t ruin the ice cream. I recommend this book to newbies who want to try their hand at it – as long as you have an ice cream maker.

    That looks yummy. We’ve made vegan chocolate banana ice cream in our ice cream maker and it was delicious.

    If you do not need an ice cream maker for.most then it sounds great! I like coconut ones.

      LOL, I would have to disguise the coconut! Kids will eat it out of a container but are very suspicious of it otherwise lol

    This looks delicious and super fun! We made ice cream recently, too and my girls had the same issue. So, we actually had milk shakes. LOL
