As I struggled with finding food that my kids will eat, I had a brainstorm. We are casein-free, which means glutens are for now, ok, so we found that Wegman’s sells bread without caseins. So, I toasted 2 slices, shredded them with the cheese grater, added pepper, oregano and garlic to taste.
Yes, I know that breadcrumbs are easier and that cutlets from the butcher are even easier. And yes, I know, I wasn’t using EVO (I’m using the Omega oil), and the meat and the bread are not organic. I could have baked them, too.
But this is a process, and it won’t be over in a few weeks. If I’m going to be realistic about finding healthy choices and alternatives for my kids, I need to be a realist. I need to find solutions that work for us in just getting me to cook / my family to eat, and once some of those hurdles come together, we can move on to the next, like finding organic meat vendors and allowing for it in our budget.
Getting better all the time – that’s my motto! And here is the result:
Two completely cleaned off plates later, the girls were happy and playing. (PS, the ketchup, broccoli and pepper are organic, and the juice has GSE, so not bad at all.)
And. Fed.
