Snack time is hard. Kids are restless, bored and just want to have fun. But homework and chores are on deck, and sometimes eating can be a drag. Fruity Froozer Gazpacho
Ok, so what is gazpacho? It’s cold soup that incorporates tomato and a kick. Or no tomato, it’s up to you! Of course, there are gazpacho purists, but if you look at what some restaurants have done with it, it’s amazing! Because this is fruity and kid-friendly, I got the “kick” from mint in this. It was fun and easy to make!
Ingredients
- 1 cup fresh pineapple, diced
- 1/2 cup fresh blueberries, diced
- 1 cup fresh strawberries, diced
- 1 cup small Zima tomatoes, diced
- 3-4 mint leaves, depending how much “zing” you want
- 1 pouch Froozer Strawbanana Bliss Frozen Fruit Snack
- 2 tablespoons full fat coconut milk (canned)
Make sure the fruits and the mint leaves are diced up very fine. I used a mechanical chopper to make them nice and smooth. Pour the fruit mixture into blender, add 1 Strawbanana Bliss pouch and the coconut milk, and select “soup” or “puree.” When done, make sure everything is smooth and chill. You can serve by piping softened Blue Aloha on top, to keep “whole fruits” in your recipe.
How to make it grown up:
Add Brie! I had a large wheel of barely eaten Brie in the refrigerator, so on a whim I dipped some pieces in the gazpacho. Can we say HEAVEN?? Cut into wedges and add to the top.
Tips for selecting the ingredients:
- I prefer to use organic produce and coconut milk.
- Don’t use frozen fruits though, that will mess with consistency.
- Fresh tomatoes are hard to find when they’re out of season, but I found “sweet” tomatoes. They still tasted like tomatoes to me, but less tangy than traditional ones.
