I love sweet potatoes. Not only are they Paleo safe, today I learned they can help boost immunity since they contain beta carotene, as well as Vitamins A and D. So when I got the chance to adapt a recipe for a fall inspired dish, I knew that I just had to try something with sweet potato! Plus, I had some Bob’s Red Mill Gluten Free Pie & Biscuit Mix, so it was a no brainer to make pie. I only had to make a few adjustments because I don’t like cooking with either sugar or nutmeg.
Now I did make pie once before, but this mix let me step up my skills. I got the chance to learn how to cut butter with knives too! How did it come out? Well, it’s not the prettiest (I’m obviously missing a pie tool) but it is delicious and the kids chomped it down! And you can see the verdict for yourselves:
So without further ado, let me share my recipe for Sweet Potato Pie.
Organic Sweet Potato Sunflower Pie* (dairy free / gluten free / soy free)
- Bob’s Red Mill Pie Crust Mix
- 2 large organic sweet potatoes
- 2 large farm fresh eggs
- 2.5 teaspoons brown rice flour
- 1/2 cup Earth Balance Soy Free All Natural Spread
- 3/4 cup organic maple syrup
- 1/2 can organic coconut milk (not firm)
- cinnamon to taste
Prepare the pie crust as per the directions and set aside. I always use a Pyrex pie dish and butter generously with Earth Balance.
First, boil the potatoes until they are fully cooked and able to be whipped. In a cast iron pot, this was pretty fast but make sure each potato is the same level of cooked.
Preheat your oven to 350°. In your mixer, add the peeled, cooled potatoes and the rest of the ingredients. Blend on medium speed until the mix is as smooth as you can get it. Pour the liquid into the pie crust. Put in middle rack and bake for 1 hour. Cool before serving. Add whipped coconut cream for the final touch.

Sweet Potato Pie and Pumpkin Pie are my favorite fall food. I so look forward to it every year. I can honestly say I haven’t made them from scratch since my oldest who is 8 was a baby. But I would love to make the sweet potato pie with all three of my kids. They love to bake.

Without a doubt, my fav fall food is pumpkin pie. I only eat it it seems in the fall and holidays and it just brings such great feelings as I associate it with spending time with my kids and family.
