This year’s school schedule has been rough, with 2 kids in separate schools. These schools are only minutes apart, but the start times..well, that has made mornings challenging! Amelia gets on the bus at 7:00AM, but Zoe’s bus doesn’t even roll up until 8:15 or even later.
And since it only takes a half an hour at most to get one kid ready, you can see I have a lot of time on my hands. Oatmeal is one of my favorite and flexible choices for the morning and when I’m on the go.
Steel-Cut vs. Rolled Oats
When it comes to oatmeal, the best kind is made from steel-cut oats. Why? Rolled and steel-cut oats are nearly the same in terms of protein, calories, fiber, and fat but they do have two important differences.
- Steel-cut oats have less sugar and therefore have a lower glycemic index.
- Rolled oats are far more processed.
In order to create those flakes for rolled oatmeal, oats are steamed and rolled a few times over. The steel-cut process cuts the groat (that is, the hull of the whole grain) into pieces. That makes it look more like rice than flakes of oatmeal and naturally keeps it closer to that real whole grain you want from your oatmeal.
The trouble is that steel-cut oatmeal takes forever to cook -up to an hour – and it can very easily come out wrong. Moms, you know you don’t have that kind of time in the morning. And that’s not a fun thing when you are primarily using cast iron and glass to cook, which can be really difficult to clean. In fact, while I love this type of oatmeal, I gave up eating it for good for these reasons.
